We may be French but we have to admit we cannot resist to an Authentic Christmas Pudding as long as you top it up with Chef Sebastien Homemade Brandy sauce available here.

Preparation, cooking and serving instructions

Microwave:

  1. Remove the plastic lid,
  2. place the pudding in its plastic casing on a plate.
  3. Reduce the power of your microwave to 40%/50% and reheat it for 10-15min. 
  4. Check how hot it is by pushing a metal skewer or knife into the centre, hold it for 5 seconds, then pull it out. The tip it should be hot to the touch. If you have a cooking thermometer, the pudding should reach 70°C in the centre. 

Let stand for five minutes before serving. 

Oven:
Remove the pudding from its plastic casing and wrap it with aluminum foil. Reheat in the oven for one hour or until hot at 150°C.

Delicious pudding

A delicious blending of fruit and spices, perfect when combined with brandy custard.

Not for publication: the pudding was a little cake like for my taste, would Sebastian consider making it with sago? If he also substituted rice flour for wheat flour it would have the extra benefit of being gluten free.

Delicious! My only comment would be that it was a bit crumbly when serving but a small problem when it tasted so good.

Both the plum pudding and the brandy sauce accompaniment were delicious. I added vanilla ice cream as well.

Delicious light pudding with rave reviews from the family. Will definitely get again. Brandy sauce was delicious too.
