Gazpacho, also called Andalusian gazpacho, is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian Peninsula and spread into other areas. Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, as it is refreshing and cool. Perfect for our hot Australian summers as a light main or an entrée.  Min 600g Serves 2.

Refreshing

Lovely refreshing cold soup in warmer weather. Goes great with the Olive Ciabata. Only suggestion would be a little bit less garlic and slightly bigger serve for 2.
