We waited patiently for the world to give the greatest stew ever conceived its own day. As French dads, we decided 20 August is World Beef Bourguignon Day, because we say so.
Escoffier put the dish into the canon of French cuisine in 1903. Julia Child called it "certainly one of the most delicious beef dishes concocted by man" in 1961.
It is peasant food that earned a white tablecloth: tough cuts, a bottle of Burgundy, and time. Nothing about it is quick, which is exactly why it belongs in a freezer instead of on your Thursday to-do list.

THE RECIPE
A couple of hours, one bottle of red, and no shortcuts anywhere.
Our executive chef Sébastien Houillon cooks the bourguignon the way he learned it. Chuck and shin are marinated overnight in Burgundy, seared in small batches, the lardons and mushrooms cooked separately so each keeps its texture. Then a long, quiet braise. Watch him walk through it.
